Happy St. Patrick's Day {here's what's cooking at my house!} #recipe

Happy St. Patrick's Day!

All though we aren't Irish my husband (and I) still love corned beef and cabbage. The only time I ever cook corned beef is this time of the year when it's on sale. I've never cooked it in the crock pot before but I figured I would give it a whirl. Here is what's cooking at my house! It's super simple to throw everything together!

1 bag of baby carrots
1 onion, peeled and sliced in rings
baby red potatoes sliced
1/2  or whole head cabbage chopped
2 cups water
1 corned beef brisket with spice packet
Guiness beer (optional)

Place the beef brisket in the bottom of the crock pot. Sprinkle spice packet over corned beef. Add veggies make sure they're evenly placed so they will cook evenly.
Pour beer over contents in crock pot. Cook approximately 8 hours. Add cabbage the last hour of cooking. If you add the cabbage to early it will get soggy and mushy and over cooked. Hope it turns out well for you!!
